Outstanding SUSHI 3 piece set in X30 CRr13 surgical grade stainless steel that has been ice tempered at -300F. These are razor sharp!

This auction is for ALL 3 knives – I do sell them as a set of two and a single 7 inch.

12 inch Santoku:
12 inches overall (30cm)
blade:7″ (18cm) long by 2 inches (5cm) wide by 2.7mm thick.

9.5 inch Santoku:
9.5 inches overall (24cm)
blade: 5 inches (13cm) long by 1.25 inches (3.3cm) by 2.25mm thick.

Santoku: means “three good things,” a reference to the three cutting tasks it performs: slicing, dicing and mincing.

Paring Knife:
8 inches overall (20cm)
blade: 3.5 inches (9cm) long by .75 inches (2cm) by 2mm thick.

All 3 knives are straight ground from back edge to a razor sharp cutting edge

What makes these knives superb is the steel used. Many kitchen knives are made with inferior grades of stainless steel. “Stainless” is a large group of steel alloys – many entirely unsuitable for blade use.

Grade 420F (X30 CRr13) is capable of attaining the best hardness, sharpness and wear resistance of all the stainless alloys. Its very high carbon content is responsible for these characteristics along with superior heat treatment. Of course this is also more expensive – you get what you pay for.

The ice tempering creates very sharp and hard cutting qualities.

This is a professional quality set that is now available for you. These are not cheap but they will take a superb edge and keep it!
